Tuna Tartare
Makes 6 servings
Ingredients:
Tuna:
1/4 cup avocado, 1/8-inch dice
1/4 cup lime juice
3/4 pound sushi grade tuna, 1/8-inch dice
1/2 cup green tomatoes, 1/8-inch dice
1/4 cup radish, grated
1/4 cup green onion, diced
1/2 cup radish, grated for garnish
Sauce:
2 tablespoons rice wine vinegar
1/2 cup light soy sauce
1/4 cup sesame oil
2 1/2 teaspoons hot chili sauce
1/4 cup packed cilantro leaves, minced
Wasabi Mayonnaise:
2 tablespoons wasabi powder mixed with enough
water to form a paste
1/2 cup mayonnaise
1/2 tablespoon finely grated ginger
1 tablespoon soy sauce
Preparation:
Tuna:
Soak avocado in lime juice for at least 10
minutes and up to overnight. Strain avocado and toss with the rest of the
ingredients.
Spoon into a timbale mold on each plate into 6 equal portions.
Spoon 1 to 2 tablespoons sauce around the timbale on the plate.
Remove timbale mold and garnish with a large pinch of radishes directly on top.
Dot each plate with the wasabi mayonnaise.
Sauce:
Mix all ingredients together and set aside.
Wasabi Mayonnaise:
Combine mayonnaise, ginger, and soy sauce. Add
the wasabi paste and blend until smooth.
