Frozen Mango Jackiri

Makes 2 12-ounce drinks

Ingredients:

1 large, ripe mango, peeled and chopped
2 cups ice cubes
1/2 cup simple syrup (see note)
2 to 3 ounces vodka
mint sprigs, for garnish

Preparation:

In a large capacity blender, put mango, ice cubes, simple syrup and vodka. Blend until completely smooth, scraping down sides as necessary.

Pour into two 12-ounce glasses. Garnish with a mint sprig and serve with straws.

Note:

Simple syrup, unlike granulated sugar, dissolves instantly in liquid and can be made and stored, refrigerated, indefinitely. Mix 1 cup of sugar and 1/2 cup of water together in a saucepan and cook over medium heat, stirring, until sugar dissolves. Boil for 2 minutes. Cool and store, covered, refrigerated. Makes 1 cup.
