Edamame with Roasted Cashews

Makes 4 appetizer servings

Ingredients:

1 cup frozen hulled edamame beans
2 teaspoons vegetable oil
1/8 teaspoon minced garlic
1/8 teaspoon minced ginger
1 tablespoon sweet soy (see note)
1/4 teaspoon salt
1/4 cup roasted salted cashews (whole or pieces)

Preparation:

In a wok or skillet, sauté edamame beans in oil, stirring until cooked through.

Add ginger and garlic, and cook briefly stirring. Add 1 tablespoon of sweet soy and the salt and cook for 15 seconds more. Put on a plate and top with roasted cashews.

Note:

Sweet soy sauce is, as the name implies, sweet dark soy sauce. You may substitute 1 tablespoon of Kikkoman soy sauce mixed with tablespoon of honey.

Frozen, hulled edamame (soy beans) are available in the frozen food sections of most supermarkets.
