Golden Tomato Coulis

Yield: 2 quarts

Ingredients:

1 bulb fennel, roughly chopped
1 large yellow onion, roughly chopped
4 TBSP freshly crushed garlic
1 white from leek, roughly chopped
2 tsp canola oil to sweat vegetables
1 small pinch saffron
2 Cups white wine
2# golden tomatoes, cut up
water to cover
1 oz champagne vinegar
salt to taste

Procedure:

1. In a stainless steel sauce pot over medium heat sweat the fennel, onion, garlic and leeks until translucent.

2. Add the saffron and white wine and reduce by ¾'s.

3. Add the tomato and just enough water to cover.

4. Simmer 20 minutes.

5. Puree, Strain

6. Adjust seasoning with the champagne vinegar and salt.
