Caramelized Chestnuts

Yield: 3 Cups

Ingredients:

1 Cup powdered sugar
1 TBSP salt
1# vacuum-packed whole chestnuts (not canned)

Procedure:

1. Pre-heat oven to 325 degrees, pre-heat frying oil to 350 degrees

2. Lay the chestnuts in a single layer onto a sheet pan and bake for 6-8 minuts until the chestnuts are hot and dry.

3. Sift together the salt and sugar and gently toss the chestnuts in the mixture to coat them.

4. Fry the chestnuts for 1-2 minutes until they are brown and crisp.
