Mansion Vinaigrette

Makes about 2/3 cup

Ingredients:

2 large shallots, minced
2 large cloves garlic, minced
1 teaspoon minced fresh basil
1 teaspoon minced fresh thyme
1 teaspoon minced fresh parsley
1 teaspoon minced fresh tarragon
1 teaspoon minced fresh chives
1 1/2 tablespoons white wine vinegar
1 tablespoon balsamic vinegar
4 tablespoons canola oil
2 tablespoons virgin olive oil
juice of 1/2 lemon or to taste
salt to taste

Preparation:

Combine shallots, garlic, herbs, and vinegars in a small bowl. Whisk in oils. Season with lemon juice and salt. Mix well to blend.
