Chilled Tomato and Avocado Soup

Ingredients:

2 cups Tomato Juice or Vegetable Juice
2 Garlic Cloves, minced
2 ripe Avocados
1 Tomato, diced
1/3 cup Lime Juice
Salt & White Pepper to Taste
Cold Water
1 tbsp. Fresh Basil, chopped
1 tbsp. Fresh Cilantro, chopped
1/4 cup Chives, finely chopped
1/2 cup Yogurt, optional

1. In a food processor or blender, puree the juice, garlic, lime juice and 1 of the avocados.

2. Season with Salt and white pepper to taste and thin with cold water to desired texture.

3. Pour into a large bowl. Mix in the diced tomato. Dice the other avocado and fold into the soup.

4. Blend in the basil, cilantro and chives.

5. Ladle into serving bowls and serve with a dollop of yogurt
